Tomato Gnocchi Soup

A warm and comforting soup featuring tender gnocchi and rich tomato flavor, perfect for cozy nights.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 pound gnocchi
  • 2 cups fresh spinach
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and cook until translucent.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the crushed tomatoes, vegetable broth, basil, oregano, and red pepper flakes.
  5. Bring to a simmer and let cook for 15 minutes.
  6. Add the gnocchi and spinach, cooking until the gnocchi are tender.
  7. Season with salt and black pepper to taste, then serve hot.

Notes
