This Sun-Dried Tomato Pasta Will Make You Ghost Your Regular Mac & Cheese

Ingredients

  • 8 ounces sun-dried tomatoes
  • 1 pound pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large pan, heat olive oil over medium heat and sauté garlic and red pepper flakes until fragrant.
  3. Add the sun-dried tomatoes and cook for 2-3 minutes.
  4. Stir in heavy cream and bring to a simmer.
  5. Mix in Parmesan cheese until melted and smooth.
  6. Add the cooked pasta, salt, and pepper; toss to coat.
  7. Garnish with fresh basil before serving.

Notes

  • For a less spicy version, reduce the amount of red pepper flakes.
  • You can add cooked protein like chicken or shrimp for extra flavor.
