A delicious and healthy twist on banana bread that is both vegan and gluten-free.

  • 3 ripe bananas
  • 1 cup almond flour
  • 1/2 cup oats
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the bananas until smooth.
  3. Add in the almond flour, oats, maple syrup, coconut oil, baking soda, salt, and vanilla extract, and mix until combined.
  4. Pour the batter into the prepared loaf pan and smooth the top.
  5. Bake for 45-55 minutes or until a toothpick comes out clean.
  6. Let it cool before slicing.
