- 6 slices turkey bacon
- 1 cup diced chicken ham
- 4 eggs
- 1 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the turkey bacon until crispy, then chop into small pieces.
- In a bowl, whisk together the eggs, salt, and pepper.
- In the skillet, add bell peppers and chicken ham, cook for 2 minutes.
- Add the egg mixture to the skillet and cook until slightly set.
- Place tortillas in a baking dish, fill with the egg mixture, turkey bacon, and top with cheese.
- Bake for 15-20 minutes or until cheese is melted and bubbly.
- Garnish with green onions before serving.
