This super moist banana bread recipe is easy to make and perfect for using up overripe bananas.

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 beaten egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • pinch of salt
  • 3/4 cup sugar
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the beaten egg and vanilla extract.
  5. Add the baking soda and salt, and mix well.
  6. Mix in the sugar, then add the flour and stir until just combined.
  7. Pour the batter into a greased loaf pan.
  8. Bake in preheated oven for 60-65 minutes.
  9. Check for doneness with a toothpick, it should come out clean.
  10. Let cool in the pan for 10 minutes, then remove and cool completely on a wire rack.

Notes

  • For extra flavor, add nuts or chocolate chips to the batter.
  • Make sure your bananas are very ripe for the best results.
