This Sun-Dried Tomato Pasta Will Make You Ghost Your Regular Mac & Cheese

Ingredients

  • 8 ounces pasta of choice
  • 1 cup sun-dried tomatoes, packed in oil
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add garlic and red pepper flakes; sauté for 1 minute.
  4. Add sun-dried tomatoes and spinach; cook until spinach is wilted.
  5. Toss in the cooked pasta and Parmesan cheese; mix well.
  6. Season with salt and pepper, serve hot.

Notes

  • For extra flavor, add fresh basil or oregano.
  • Can be served with grilled chicken or shrimp for protein.
