  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, sugar, brown sugar, vegetable oil, and eggs until well blended.
  4. Gradually combine the wet ingredients with the dry ingredients until just mixed.
  5. In a separate bowl, combine softened cream cheese, vanilla extract, and powdered sugar until smooth.
  6. Fill each muffin cup halfway with the pumpkin batter, add a dollop of cream cheese mixture, and then top with more pumpkin batter.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool before serving.
