- 2 cups sushi rice
- 2 cups water
- 1 pound salmon fillet
- 1/4 cup mayonnaise
- 2 tablespoons sriracha
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/4 cup green onions, chopped
- 1 sheet nori seaweed
- 1 tablespoon sesame seeds
- Preheat your oven to 375°F (190°C).
- Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer’s instructions.
- While the rice is cooking, prepare the salmon. Place the salmon fillet in a baking dish and bake for 15-20 minutes or until cooked through.
- Once the salmon is cooked, flake it into a bowl and mix with mayonnaise, sriracha, soy sauce, sesame oil, and green onions.
- When the rice is done, spread it evenly in the bottom of a baking dish.
- Top the rice with the salmon mixture, spreading it evenly.
- Crumble the nori sheet over the top and sprinkle with sesame seeds.
- Bake for 10-15 minutes until heated through.
- Remove from the oven and let cool slightly before serving.
