  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until well combined.
  4. Add baking soda and salt, then mix in the sugar, egg, and vanilla extract.
  5. Gradually fold in the flour until just incorporated.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra flavor, add chocolate chips or walnuts to the batter.
  • Ensure bananas are very ripe for best sweetness.
