  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup salsa
  • 1 tablespoon taco seasoning
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • salt and pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the black beans, corn, salsa, and taco seasoning on top of the chicken.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken in the slow cooker and mix everything together.
  5. Serve over rice, topped with cheese, avocado, and cilantro.
