Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a large dutch oven, sear the chuck roast over medium-high heat until browned on all sides.
  3. Remove the roast and sauté the onions and garlic until golden brown.
  4. Add the wine and broth, scraping the bottom of the pot.
  5. Stir in Worcestershire sauce, thyme, and season with salt and pepper.
  6. Return the roast to the pot, cover, and transfer to the oven.
  7. Cook for 3-4 hours until tender.
