1 pound fresh salmon
1/2 cup breadcrumbs
1/4 cup chopped green onions
1 egg
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 ripe avocado
1 tablespoon lime juice
1 teaspoon chopped cilantro
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the salmon, breadcrumbs, green onions, egg, mayonnaise, Dijon mustard, garlic powder, salt, and pepper. Mix until well combined.
Form the mixture into balls and place them on a baking sheet.
Bake for 15-20 minutes until golden brown and cooked through.
For the sauce, mash the avocado in a small bowl and mix in the lime juice and cilantro.
