  • 1 pound salmon, cooked and flaked
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 avocados
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the salmon, breadcrumbs, eggs, green onions, garlic, parsley, salt, and black pepper. Mix until well combined.
  3. Form the mixture into small balls and place them on a baking sheet lined with parchment paper.
  4. Bake for 15-20 minutes, or until golden brown and cooked through.
  5. While the salmon balls are baking, prepare the creamy avocado sauce by blending the avocados, sour cream, lime juice, garlic powder, and salt in a food processor until smooth.
  6. Serve the salmon balls warm with the avocado sauce on the side.
