Quick & Healthy Egg Muffins with Spinach and Feta

Deliciously quick and healthy egg muffins filled with spinach and feta cheese that make for a perfect breakfast or snack.

  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.
  3. Stir in the chopped spinach and crumbled feta cheese.
  4. Pour the egg mixture evenly into the prepared muffin tin.
  5. Bake for 20-25 minutes or until the muffins are set and lightly golden.
  6. Allow to cool slightly before removing from the tin.
