  • 1/2 cup cream cheese

  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix the pumpkin puree, cream cheese, sugar, and vegetable oil until smooth.
  3. Add the eggs and mix well.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fill the muffin liners about 2/3 full with batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
