  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 cup cinnamon sugar mixture (sugar and cinnamon combined for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together pumpkin puree, sugar, brown sugar, vegetable oil, and eggs until well combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, nutmeg, and cloves.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fill each muffin liner halfway with batter, then sprinkle a layer of cinnamon sugar mixture on top. Fill the rest of the way with batter and top with more cinnamon sugar.
  6. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool slightly before serving.

Notes

  • For added flavor, you can sprinkle chopped pecans or walnuts on top.
  • These muffins are best enjoyed fresh but can be stored for a few days.
