- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1 cup cinnamon sugar mixture (sugar and cinnamon combined for filling)
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together pumpkin puree, sugar, brown sugar, vegetable oil, and eggs until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, nutmeg, and cloves.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fill each muffin liner halfway with batter, then sprinkle a layer of cinnamon sugar mixture on top. Fill the rest of the way with batter and top with more cinnamon sugar.
- Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before serving.
