Potato and Spinach Frittata

A healthy and delicious potato and spinach frittata that is perfect for any meal of the day.

Ingredients

  • 2 cups diced potatoes
  • 1 cup fresh spinach, chopped
  • 4 large eggs
  • 1/2 cup grated cheese (optional)
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat the olive oil over medium heat and sauté the diced potatoes until tender.
  3. Add the chopped spinach and cook until wilted.
  4. In a bowl, beat the eggs and season with salt and pepper.
  5. Pour the egg mixture over the potatoes and spinach.
  6. If using, sprinkle the grated cheese on top.
  7. Cook on the stovetop for a few minutes until the edges start to set, then transfer to the oven.
  8. Bake for 15-20 minutes or until fully set.
  9. Let cool slightly, then slice and serve.
