  • 4 slices turkey bacon

  • 1 avocado
  • 1 lime
  • 2 tablespoons cilantro

Instructions

  1. Cook the rice according to package instructions.
  2. In a skillet, cook the turkey bacon until crispy, then remove and chop.
  3. In the same skillet, add the ground turkey and cook until browned.
  4. Add black beans, corn, salsa, cumin, and chili powder to the skillet, and let simmer for 10 minutes.
  5. Serve the mixture over rice and top with cheese, chopped bacon, avocado slices, and cilantro.
  6. Squeeze lime juice over the bowl before serving.
