Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and trim the asparagus.
  3. In a bowl, mix breadcrumbs, Parmesan, garlic powder, salt, and pepper.
  4. In another bowl, whisk the eggs.
  5. Dip each asparagus spear in the egg, then coat with the breadcrumb mixture.
  6. Place on a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes until crispy and golden brown.

Notes

  • For extra flavor, add herbs like oregano or thyme to the breadcrumb mixture.
