  • 1/4 cup sugar
  • 1/4 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter, then press the mixture into the bottom of mini cheesecake pans.
  3. In another bowl, beat the cream cheese and powdered sugar until smooth.
  4. Add the sour cream, eggs, lemon juice, and lemon zest to the cream cheese mixture and blend until well combined.
  5. Pour the cheesecake filling over the crusts in the mini pans.
  6. Bake for 20-25 minutes or until the centers are set. Remove from the oven and let cool.
  7. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • For a sweeter taste, you can increase the powdered sugar to your liking.
