- 8 ounces whole wheat pasta
- 1 cup corn, grilled or canned
- 4 slices turkey bacon, cooked and crumbled
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/4 cup chopped fresh cilantro
- 1/2 cup Greek yogurt
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- Cook the pasta according to the package directions. Drain and set aside to cool.
- In a large bowl, combine corn, turkey bacon, red onion, bell pepper, and cilantro.
- In a separate bowl, mix Greek yogurt, lime juice, chili powder, and salt to make the dressing.
- Add the cooled pasta to the vegetable mixture and pour the dressing over it. Mix until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For more flavor, grill the corn instead of using canned.
- Feel free to add avocado or cheese for extra creaminess.
