Mexican Street Corn Pasta Salad

This Mexican Street Corn Pasta Salad combines the delicious flavors of traditional street corn with healthy ingredients and turkey bacon.

Ingredients

  • 8 ounces whole wheat pasta
  • 1 cup corn, grilled or canned
  • 4 slices turkey bacon, cooked and crumbled
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt

Instructions

  1. Cook the pasta according to the package directions. Drain and set aside to cool.
  2. In a large bowl, combine corn, turkey bacon, red onion, bell pepper, and cilantro.
  3. In a separate bowl, mix Greek yogurt, lime juice, chili powder, and salt to make the dressing.
  4. Add the cooled pasta to the vegetable mixture and pour the dressing over it. Mix until well combined.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For more flavor, grill the corn instead of using canned.
  • Feel free to add avocado or cheese for extra creaminess.
