Mexican Rotisserie Chicken Tostadas

A delicious twist on a classic dish, these Mexican Rotisserie Chicken Tostadas are easy to make and packed with flavor.

  • 1 rotisserie chicken, shredded
  • 8 tostada shells
  • 1 cup refried beans
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the tostada shells on a baking sheet and warm them in the oven for about 5 minutes.
  3. Spread a layer of refried beans on each tostada shell.
  4. Add a generous amount of shredded rotisserie chicken on top of the beans.
  5. Top with shredded lettuce, diced tomatoes, and shredded cheese.
  6. Return the tostadas to the oven for another 5 minutes, until the cheese is melted.
  7. Remove from the oven and drizzle with sour cream and sprinkle with chopped cilantro before serving.
