Mediterranean Baked Fish

  • 2 fish fillets
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup olives, sliced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, pepper, and red pepper flakes.
  3. Place the fish fillets in a baking dish and pour the marinade over them.
  4. Top the fish with cherry tomatoes and olives.
  5. Bake for 20-25 minutes or until the fish flakes easily with a fork.
  6. Garnish with fresh parsley before serving.
