  • 1 packet taco seasoning
  • 1 cup black beans, drained
  • 1 cup corn, drained
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • 1 cup lettuce, shredded
  • 1 lime, cut into wedges

Instructions

  1. Cook brown rice according to package instructions.
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning to the beef along with a cup of water, stir and simmer for about 5 minutes.
  4. In a large bowl, combine cooked rice, seasoned beef, black beans, corn, and diced tomatoes.
  5. Serve in bowls and top with cheese, avocado, and lettuce. Squeeze lime juice over the top.
