Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix pumpkin puree, maple syrup, olive oil, and eggs until combined.
  3. In a separate bowl, combine whole wheat flour, baking soda, baking powder, salt, and spices.
  4. Gradually mix the dry ingredients into the wet ingredients until just blended.
  5. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool for a few minutes before removing from the tin.
