Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mash the ripe bananas.
  3. Add peanut butter, honey (or maple syrup), eggs, baking soda, vanilla extract, and salt to the mashed bananas. Mix well.
  4. Fold in the gluten-free oats until evenly combined.
  5. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Allow muffins to cool before transferring them to a wire rack.
