- 1 cup pumpkin puree
- 1/2 cup Greek yogurt
- 1/2 cup honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the pumpkin puree, Greek yogurt, honey, eggs, and vanilla extract.
- In another bowl, whisk together the whole wheat flour, baking soda, baking powder, pumpkin pie spice, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
- Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool before removing them from the tin.
