  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup raisins
  • 1/4 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, ground cinnamon, and salt.
  3. In another bowl, mix together the maple syrup, applesauce, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Add the grated carrots, raisins, and walnuts to the mixture and fold gently.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra sweetness, you can add a bit more maple syrup or some dusting of powdered sugar on top.
