- 1 cup mashed ripe bananas
- 1 cup grated carrots
- 1/2 cup Greek yogurt
- 2 large eggs
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 1/2 cups whole wheat flour
- 1/2 cup chopped walnuts
- 1/2 cup raisins
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the mashed bananas, grated carrots, Greek yogurt, eggs, honey, and vanilla.
- Add baking soda, cinnamon, and salt, and mix well.
- Gradually fold in the whole wheat flour, walnuts, and raisins until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
- For a lighter frosting, use cream cheese mixed with Greek yogurt.
- Can be served warm or at room temperature.
