Greek Pasta Salad

A delicious and refreshing Greek Pasta Salad with the added twist of turkey bacon.

Ingredients

  • 8 ounces rotini pasta
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. In a skillet, cook the turkey bacon until crispy. Remove from heat, crumble, and set aside.
  3. In a large bowl, combine the cooked pasta, turkey bacon, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For added flavor, let the salad sit in the fridge for a few hours before serving.
  • Add grilled chicken for extra protein if desired.
