- 8 ounces rotini pasta
- 4 slices turkey bacon
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Cook the rotini pasta according to package instructions. Drain and let cool.
- In a skillet, cook the turkey bacon until crispy. Remove from heat, crumble, and set aside.
- In a large bowl, combine the cooked pasta, turkey bacon, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
