Greek Chicken Orzo Pasta Bake with Lemon (One Pan)

  • 1 pound boneless chicken thighs
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes
  • 1 cup spinach
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • 1 lemon, zested and juiced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In an oven-safe skillet, heat olive oil over medium heat and add the chicken. Cook until browned.
  3. Add the orzo, chicken broth, garlic powder, onion powder, oregano, lemon zest, and juice. Stir to combine.
  4. Bring to a boil and then reduce heat to simmer for 10 minutes.
  5. Add the spinach and cherry tomatoes, stir, and then transfer skillet to the oven.
  6. Bake for 15-20 minutes until orzo is cooked and chicken is tender.

Notes

  • You can add feta cheese on top before baking for an extra flavor boost.
  • Feel free to substitute chicken thighs with chicken breasts if preferred.
