Garlic Butter Steak and Potatoes

  • 2 pounds ribeye steak
  • 1 pound baby potatoes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 teaspoons fresh rosemary, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the steak with salt and pepper on both sides.
  3. In a large oven-safe skillet, heat a tablespoon of butter over medium-high heat.
  4. Once hot, add the steak and sear for 4-5 minutes on each side until deeply browned.
  5. Remove the steak from the skillet and set aside.
  6. In the same skillet, add the baby potatoes, garlic, rosemary, and the remaining butter. Stir to coat the potatoes.
  7. Return the steak to the skillet, placing it on top of the potatoes.
  8. Bake in the preheated oven for 15-20 minutes, or until the steak reaches your desired level of doneness.
  9. Let rest for 5 minutes before slicing and serving with the potatoes.
