Easy Creamy Lasagna Soup

A creamy and comforting bowl of lasagna soup that is easy to make and perfect for any day of the week.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 8 ounces lasagna noodles, broken
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • Salt and pepper, to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in crushed tomatoes, chicken broth, and broken lasagna noodles. Add Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the noodles are tender.
  5. Remove from heat and stir in ricotta and mozzarella cheeses until melted and creamy.
  6. Serve hot, garnished with Parmesan cheese.

Notes

  • For a vegetarian version, substitute ground beef with lentils or mushrooms.
  • Feel free to add more vegetables like spinach or bell peppers.
