  • 1 box vanilla wafers
  • 2 cups milk
  • 1/2 cup sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream

Instructions

  1. In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt.
  2. Cook over medium heat, stirring constantly until the mixture thickens and comes to a boil.
  3. In a separate bowl, whisk the eggs and temper them with a small amount of the hot milk mixture, then return to the saucepan.
  4. Stir in the vanilla extract and remove from heat.
  5. Layer the vanilla wafers, sliced bananas, and pudding in a dish.
  6. In a separate bowl, whip the heavy cream to stiff peaks and spread over the top of the pudding.
  7. Refrigerate for at least 4 hours before serving.
