A delicious and creamy pasta salad featuring street corn and turkey bacon, perfect for summer gatherings.

  • 8 ounces pasta of your choice
  • 4 strips turkey bacon
  • 1 cup sweet corn, grilled
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1/4 cup cilantro, chopped
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  3. In a large bowl, combine the pasta, bacon, corn, tomatoes, onion, mayonnaise, lime juice, cilantro, chili powder, salt, and pepper.
  4. Toss until well combined. Chill in the refrigerator for at least 30 minutes before serving.
