  • 12 ounces rigatoni pasta
  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups spinach
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the rigatoni according to package instructions. Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned.
  3. Add onion and garlic, cooking until the onion is translucent.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese.
  5. Add the cooked rigatoni and spinach to the pot, mixing well. Season with salt and pepper.
  6. Serve hot, garnished with additional Parmesan if desired.
