- 8 ounces fettuccine pasta
- 1 pound chicken breast, diced
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 onion, diced
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup parmesan cheese, grated
- salt and pepper to taste
- Cook fettuccine according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat and add diced chicken. Season with Cajun seasoning and cook until browned.
- Add bell pepper, onion, and garlic to the skillet and sauté until softened.
- Pour in heavy cream and bring to a simmer. Stir in parmesan cheese until melted and combined.
- Add cooked fettuccine to the sauce and toss to coat. Season with salt and pepper.
- Serve hot, garnished with additional parmesan if desired.
