Cottage Cheese Egg Bites

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup cooked turkey bacon, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the cottage cheese, eggs, turkey bacon, cheddar cheese, black pepper, and salt until well combined.
  3. Grease a muffin tin with non-stick spray.
  4. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes or until the egg bites are set and lightly golden.
  6. Allow to cool slightly before removing from the tin.

Notes

  • For added flavor, consider adding herbs such as spinach or chives.
  • These egg bites can be made ahead of time and stored in the fridge.
