Cottage Cheese and Spinach Crustless Quiche

A delicious and simple crustless quiche made with cottage cheese and spinach.

Ingredients

  • 2 cups cottage cheese
  • 1 cup fresh spinach, chopped
  • 4 large eggs
  • 1 cup shredded cheese (such as cheddar or mozzarella)
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix cottage cheese, spinach, eggs, and milk.
  3. Stir in cheese, salt, pepper, and garlic powder.
  4. Pour the mixture into a greased pie dish.
  5. Bake for 30-35 minutes or until the quiche is set and golden on top.
  6. Let it cool for a few minutes before slicing and serving.

Notes

  • Serve warm or at room temperature.
