- 8 ounces rotini pasta
- 4 slices turkey bacon
- 1 cup cubed chicken ham
- 1 cup cherry tomatoes, halved
- 1/2 cup diced cucumbers
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- salt and pepper to taste
- 1/4 cup chopped fresh parsley
- Cook the rotini pasta according to package instructions. Drain and let cool.
- In a pan, cook the turkey bacon until crispy. Remove from heat and chop into pieces.
- In a large bowl, combine the cooled pasta, turkey bacon, chicken ham, cherry tomatoes, cucumbers, red onion, and parsley.
- In a small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
- Pour the dressing over the pasta salad and mix until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a lighter version, use Greek yogurt instead of mayonnaise.
- Feel free to add your favorite vegetables.
