  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 tablespoon ground cinnamon
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
  5. Stir in the sour cream and ground cinnamon until well combined.
  6. Pour the cheesecake mixture over the crust in the pan.
  7. Bake for 60 minutes or until the center is set.
  8. Let it cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

  • For a more pronounced churro flavor, serve with a sprinkle of cinnamon sugar on top.
  • Use a water bath while baking to prevent cracking.
