Christmas Maraschino Cherry Shortbread Cookies

Deliciously festive cookies filled with maraschino cherries.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup maraschino cherries, chopped
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and powdered sugar until light and fluffy.
  3. Add in the vanilla extract and mix until combined.
  4. Slowly add the flour and salt, mixing until just combined.
  5. Fold in the chopped maraschino cherries.
  6. Scoop tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a festive touch, dust cookies with additional powdered sugar before serving.
  • Chill the dough for 30 minutes for easier handling.
