1 cup grated zucchini
1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ cup granulated sugar
½ cup brown sugar
2 large eggs
½ cup vegetable oil
1 teaspoon vanilla extract
1 cup chocolate chips
Instructions
Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a large bowl, combine the grated zucchini, sugars, eggs, oil, and vanilla. Mix well.
In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in the chocolate chips.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Let cool before slicing.
Notes
For a healthier version, you can substitute some of the oil with applesauce.
Do not overmix the batter to ensure a light texture.
