8 ounces linguine pasta
1 pound chicken breasts, sliced
8 ounces mushrooms, sliced
1/2 cup Marsala wine
1 cup chicken broth
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Instructions
Cook the linguine pasta according to package instructions; drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the sliced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
Add the sliced mushrooms and garlic to the skillet. Sauté until the mushrooms are soft, about 5 minutes.
Pour in the Marsala wine and cook, scraping up any browned bits, for about 2 minutes.
Add the chicken broth and thyme. Simmer for 5 minutes until the sauce thickens slightly.
Toss the cooked pasta into the skillet, mixing well to combine with the sauce.
Garnish with fresh parsley before serving.
Notes
For added richness, you can stir in a tablespoon of butter at the end.
