Chicken Marsala Pasta

A delicious take on the classic Chicken Marsala, this pasta dish combines juicy chicken, savory mushrooms, and a rich Marsala sauce for a comforting meal.

  • 8 ounces linguine pasta
  • 1 pound chicken breasts, sliced
  • 8 ounces mushrooms, sliced
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the linguine pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Add the sliced mushrooms and garlic to the skillet. Sauté until the mushrooms are soft, about 5 minutes.
  4. Pour in the Marsala wine and cook, scraping up any browned bits, for about 2 minutes.
  5. Add the chicken broth and thyme. Simmer for 5 minutes until the sauce thickens slightly.
  6. Toss the cooked pasta into the skillet, mixing well to combine with the sauce.
  7. Garnish with fresh parsley before serving.
