- 2 boneless chicken breasts
- 1 cup flour
- 2 eggs
- 1 cup breadcrumbs
- 1/2 cup Parmesan cheese
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon fresh basil, chopped
- Preheat the oven to 375°F (190°C).
- In a shallow dish, prepare the flour. In another dish, beat the eggs. In a third dish, combine breadcrumbs and Parmesan cheese.
- Dredge each chicken breast in flour, dip in eggs, then coat with breadcrumbs.
- Heat olive oil in a skillet over medium heat and cook chicken until golden brown on both sides.
- Transfer chicken to a baking dish and bake for 20 minutes.
- In the same skillet, sauté garlic until fragrant, then add heavy cream and chicken broth. Bring to a simmer.
- Add chopped basil to the cream sauce, season with salt and pepper to taste.
- Once chicken is cooked, pour sauce over the chicken and serve.
