Chicken Bellagio

  • 2 boneless chicken breasts
  • 1 cup flour
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/2 cup Parmesan cheese
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a shallow dish, prepare the flour. In another dish, beat the eggs. In a third dish, combine breadcrumbs and Parmesan cheese.
  3. Dredge each chicken breast in flour, dip in eggs, then coat with breadcrumbs.
  4. Heat olive oil in a skillet over medium heat and cook chicken until golden brown on both sides.
  5. Transfer chicken to a baking dish and bake for 20 minutes.
  6. In the same skillet, sauté garlic until fragrant, then add heavy cream and chicken broth. Bring to a simmer.
  7. Add chopped basil to the cream sauce, season with salt and pepper to taste.
  8. Once chicken is cooked, pour sauce over the chicken and serve.

  • Serve with pasta or a fresh salad.
  • For extra flavor, add sun-dried tomatoes to the sauce.
