  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños (fresh or pickled)

Instructions

  1. Preheat the waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, vegetable oil, and eggs.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  6. Lightly grease the waffle iron and pour the batter onto the hot surface.
  7. Close the waffle iron and cook until golden brown, about 5 minutes.
  8. Remove the waffles and repeat with the remaining batter.
