1 pound shrimp, peeled and deveined
2 tablespoons blackening seasoning
8 ounces egg noodles
1 tablespoon olive oil
1 cup heavy cream
½ cup chicken broth
1 cup mushrooms, sliced
1 teaspoon garlic, minced
½ cup onion, chopped
¼ cup parsley, chopped
Salt to taste
Black pepper to taste
Instructions
Cook the egg noodles according to package instructions; drain and set aside.
In a bowl, toss the shrimp with the blackening seasoning.
Heat olive oil in a skillet over medium-high heat. Add the seasoned shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
In the same skillet, sauté onions and garlic until translucent.
Add mushrooms and cook until soft.
Stir in chicken broth and heavy cream; allow to simmer until thickened.
Add cooked noodles and shrimp back to the skillet, toss to combine. Season with salt and pepper.
Garnish with parsley before serving.
