Blackened Salmon Stuffed with Spinach & Parmesan

A delightful dish featuring seasoned salmon fillets stuffed with spinach and Parmesan cheese, perfect for a quick weeknight dinner.

Ingredients

  • 2 salmon fillets
  • 1 cup fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon blackening seasoning
  • 1/4 teaspoon garlic powder
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté spinach until wilted.
  3. Add Parmesan cheese and garlic powder, mixing well.
  4. Season salmon fillets with blackening seasoning and salt.
  5. Stuff the spinach and cheese mixture into each salmon fillet.
  6. Place the stuffed salmon in a baking dish and bake for about 15-20 minutes or until the salmon is cooked through.

Notes

  • For an extra kick, add crushed red pepper flakes to the stuffing.
