  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix grated zucchini, oil, sugar, eggs, and vanilla.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add dry ingredients to the wet ingredients and mix until just combined. Fold in walnuts if using.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
