- 2 large sweet potatoes
- 1 pound boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup chopped green onions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork. Bake for 45-60 minutes until tender.
- In a skillet, heat olive oil over medium heat. Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
- Cook the chicken for about 6-7 minutes per side, or until cooked through.
- Remove from heat and shred the chicken. Mix with BBQ sauce.
- Once the sweet potatoes are done, slice them open and fill them with BBQ chicken.
- Top with chopped green onions and serve warm.
